Peppermint patties7/25/2023 Working in batches, keep most of the patties in the freezer and remove about 6-10 at a time, cover the patties in chocolate and place them on parchment paper. Meanwhile, add chocolate chips and coconut oil to a microwave-safe bowl and microwave in 15-second increments, stirring between, until the chocolate is melted. Cover, and place back into the freezer for 30 minutes up to 24 hours. Using a 1-inch round cookie cutter, cut dough into rounds. Place in the refrigerator until dough is very firm, about 1 hour. Use powdered sugar to help prevent the dough from sticking and roll the dough out to 1/4 inch thick. Remove the baking sheet from the freezer. Microwave in 20-30 second increments, stirring well after each increment, until completely melted and smooth. Once the patties are almost ready, add the chopped chocolate to a microwave-safe bowl. Place dough on the prepared cookie sheet. Place the baking sheets with the cut-out peppermint patties in the freezer for 15-20 minutes to harden. Add up to 1/2 cup more powdered sugar, one tablespoon at a time, if needed, until that consistency is reached. The dough should be the consistency of playdough. In the bowl of a stand mixer with the paddle attachment, cream together sweetened condensed milk, 5 cups powdered sugar, and peppermint oil, and mix until smooth. This can be done with xylitol for example.Line a cookie sheet with parchment paper and side aside BUT if your body is different then we suggest you turning your favorite sugar alcohol into powder simply by blending. Personally our family only eats one maybe two a day and we are fine. Some people do have digestive upset with erythritol. If you made your own low carb chocolate you can even control the carb counts even more. Which after I calculated actually made a ton of sense.
